Carol J. Strother (née Shapiro), 68, of Bluffton, South Carolina, passed peacefully in her sleep on Tuesday, June 16, 2026.
Carol was born in Poughkeepsie, New York, and later lived in Metuchen, New Jersey, and Clayton, Missouri. She was a talented and accomplished chef, training at the Johnson & Wales University College of Culinary Arts before beginning her career in Pittsfield, Massachusetts, in the foothills of the Berkshires. She worked in many distinguished kitchens throughout Massachusetts, New York, and South Carolina until illness compelled her to retire in the Hilton Head area.
Carol was passionate about animals and fiercely protective of their welfare. Active in multiple local rescue organizations, she devoted immense love and compassion to homeless, injured, and ill animals of all types and sizes.
She treasured her years in South Carolina, especially her sunrise runs on Folly Field Beach with her beloved dog—and champion Frisbee catcher—Barley. Barley was her constant companion and a trained therapy dog. Together, they regularly visited hospitals in Savannah, bringing smiles to the faces of many young children.
Despite her advancing illness, Carol continued to find the time and energy to volunteer with Meals on Wheels in Bluffton, helping prepare meals for those in need.
Carol is survived by her brother, Andrew Shapiro of Walnut Creek, California; her sister, Susan Copeland of Killington, Vermont; her niece, Kathrine Copeland of Woodstock, Vermont; and her nephews, Sam Copeland of Melrose, Massachusetts, and Daniel Shapiro of San Francisco, California.
The family plans to hold a private memorial service later this year.
Those wishing to honor Carol's memory may make a donation to their local animal rescue organization or to Hospice Care of the Lowcountry in Bluffton, South Carolina
